Shabu-shabu

Shabu-shabu is one of the Japanese hot pot dishes, and it is a dish that you put meat and vegetables in a pot of kombu soup stock and eat it with ponzu soy sauce and sesame sauce.

INGREDIENTS

  • Pork or beef (sliced) : 300g
  • Mizuna(potherb mustard) : 1 stick
  • Tofu : 200g
  • Carrot : 1/2
  • Spring onion : 1/2
  • Shiitake mushrooms : 4
  • Water : 4 cups
  • Sake : 1 tablespoon
  • Kombu dashi (a kind of kelp) (granules) : 2 teaspoons
  • ponzu soy sauce : Appropriate amount

RECIPE

  1. Cut pork or beef, mizuna greens, tofu, carrots, and green onions into bite-sized pieces. Cut the axle of the shiitake mushrooms.
  2. Put water, sake, and kombu dashi in a pot and heat.
  3. Put mizuna, tofu, carrots, green onions and shiitake mushrooms in a pot and cook through.
  4. Place each piece of pork or beef in the pot, and when cooked, dip it in ponzu soy sauce and eat.

SUPPLEMENT

Crabs and yellowtails are sometimes used instead of meat.
Pork is called “buta-shabu”, beef is called “gyu-shabu”, crab is called “kani-shabu”, and yellowtail is called “buri-shabu”.
Rubbed sesame sauce is sometimes used instead of ponzu soy sauce.
