“Saba no misoni” is a Japanese dish of mackerel fillet stewed in sweet and salty miso or soy sauce.
Mackerel is called “saba” in Japan.
It has a strong flavor and goes well with alcoholic beverages such as Japanese sake.
INGREDIENTS

- Mackerel (fillet) : 4
- Hot water : Appropriate amount
- Water : 1/2 cup
- Miso : 1 tablespoon
- Ginger : 1 teaspoon
- Soy sauce : 2 teaspoons
- Sake : 1 tablespoon
- Mirin : 1 tablespoon
- Sugar : 2 tablespoons
RECIPE
- Make an incision on the skin side of the mackerel and pour boiling water over it to remove the smell.
- Add water, miso, soy sauce, sake, mirin, and sugar to a frying pan and bring to a boil.
- Add the mackerel and ginger and simmer until the broth becomes thick.
SUPPLEMENT
It is better to put a drop lid on the mackerel so that it does not fall apart.
Also, shake the pan occasionally to keep it from burning.
