Chankonabe

Chankonabe is a Japanese hot pot dish that is mainly eaten by sumo wrestlers in sumo stables.
There are not many rules about seasonings and ingredients, but chicken is often used for ingredients and soup stock from long ago.
Because of its nutritional balance, it is a popular Japanese dish in Japan, even for people other than sumo wrestlers.

INGREDIENTS

  • Water : 3 cups
  • Sake : 1/4 cup
  • Chicken stock powder : 1 tablespoon
  • Salt : 5g
  • Garlic (grated) : 1 clove
  • Ginger (grated) : appropriate amount
  • Mirin(a type of sake with low alcohol and high sugar content) : 2 tablespoons
  • Soy sauce : 1/2 tablespoon
  • Sesame oil : 1 teaspoon
  • Onion : 1/4 piece
  • Chicken meatballs : 250g
  • Chicken : 100g
  • Pork : 100g
  • Cabbage : 1/8 piece
  • Chinese chive : 1/2 piece
  • Carrot : 1/2 piece
  • Mushrooms : appropriate amount
  • Tofu : 1 piece

RECIPE

  1. Add water, sake, chicken stock powder, salt, garlic, ginger, soy sauce, and sesame oil and bring to a boil.
  2. After cooling, add the onion cut into wedges.
  3. Cut chicken, pork, vegetables, mushrooms, and tofu into bite-sized pieces.
  4. Put it all in the soup, boil it and let it cook and it’s done.
