Katsuo-no-tataki

“Katsuo no tataki” is Washoku in which only the surface of the bonito is grilled over high heat, then cooled and sliced.
Eat with ponzu sauce with condiments.
Ponzu is a mixture of citrus juice, vinegar, and soy sauce.

INGREDIENTS

  • Bonito(for sashimi) : 1 fence (1/4 tail)
  • Salt : appropriate amount
  • Salad oil : a little
  • Myoga(Japanese ginger) : 2 sticks
  • Perilla : 3 sheets
  • Ginger : appropriate amount
  • Garlic chips : appropriate amount
  • Green onion : 1 bunch
  • Onion : 1/2 piece
  • Ponzu sauce : appropriate amount

RECIPE

  1. Sprinkle the bonito with salt and let it sit for a while, then wipe off the moisture with a cloth.
  2. Spread oil in a frying pan and grill the bonito over high heat only on the surface.
  3. Place the grilled bonito in ice water, wipe off the water, and cut into desired thickness.
  4. Shred the ginger and myoga, thinly slice the onion and soak in water.ut green onions into small pieces.
  5. Place perillas and onions in a bowl, place bonito on top, and top with garlic chips, ginger, myoga ginger, and green onions.Eat with ponzu sauce.
