Potato salad is a salad made from mashed boiled potatoes and mixed with vegetables and mayonnaise.
There is a theory that it originated in Russian cuisine and that the cooking method was changed in Japan.
In Japan, it is also famous as a standard salad to put in the obento(lunch box).
INGREDIENTS

- Potatoes : 2
- Carrot : 1/3
- Cucumber : 1/3
- Ham : 2 pieces
- Mayonnaise : 4 tablespoons
- Salt : Appropriate amount
- Pepper : Appropriate amount
RECIPE
- Boil the potatoes in a pan with the skin on.
- Peel the carrot, cut it thinly and boil it.
- Cut the cucumber into thin slices. Sprinkle with salt and let it sit for a while, then wipe off the excess water.
- Cut the ham into thin strips.
- Peel the boiled potatoes and mash them in a bowl.
- Put carrot, cucumber, ham, mayonnaise, salt and pepper in a bowl and mix.
SUPPLEMENT
Try to keep the water from the carrot and cucumber out of the potato salad as much as possible.
Add a little vinegar and sugar when mashing the potatoes for a deeper flavor.
Boiled eggs may be added, and bacon may be substituted for ham.
